Ingredients:
• 1 cup (2 sticks) unsalted butter, softened
• 1 cup packed brown sugar
• 1/4 cup pure maple syrup
• 2 large eggs
• 1 tsp vanilla extract
• 1 1/2 cups all-purpose flour
• 1/2 tsp salt
• 3 cups old-fashioned rolled oats
Optional mix-ins:
• 1/2 cup chopped pecans or walnuts
• 1/2 cup raisins or dried cranberries
• A handful of mini chocolate chips
⸻
Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream the butter and brown sugar together in a large bowl until light and fluffy (about 2-3 minutes).
3. Add the maple syrup, eggs, and vanilla, and mix until well combined.
4. In a separate bowl, whisk together the flour and salt. Gradually add this to the wet mixture, mixing just until combined.
5. Stir in the oats and any optional mix-ins you like.
6. Drop rounded tablespoons of dough onto the baking sheet, spacing them about 2 inches apart. Flatten them slightly with your fingers or a spoon for even baking.
7. Bake for 10–12 minutes, or until the edges are golden and the centers are just set. They’ll continue to firm up as they cool.
8. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
